CCCI, DOST empowers Food Industry with 2-Day Training on Food Safety Management System

16 participants from 8 participating companies attended the 2-Day ISO 22000 Food Safety Management Systems Training (FSMS) Training organized by the Cebu Chamber of Commerce and Industry (CCCI) in partnership with the Department of Science and Technology (DOST) on June 13-14, 2023 at the Ambassador Francisco Benedicto Function Room, 3F, Cebu Chamber Centre, NRA, Cebu City.

The FSMS is a controlled process developed and implemented by food establishment operators for managing food safety to ensure that all food that is produced is up to quality standards and that food handling practices reduce the risk of foodborne illness and ensure the safest products possible.

During the 2-Day training, participants learned the principles and elements of implementing a Food Safety Management System in the organization, the regulatory compliance to ISO standards and other GFSI recognized scheme. In addition, the speaker, Mr. James D. Bondal, MPA, Ph.D-TM (CAR), a food safety expert from the CCCI Cebu Food Consultancy Group (CFCG), shared practical tips on controlling risks and hazards in the food processing industry as a bonus.

Mr. Bondal’s fun, vibrant and peppy discussion emphasized on the importance and benefits of implementing food safety in the food industry. The discussion primarily focused on the Food Safety Management Framework, its benefits in implementation, Global Food Safety Initiative and other GFSI Schemes, Certification and Audit Processes, Food Safety Policy and Planning, Senior Management Commitment and Continual Improvement, The Food Safety Plan-HACCP, Food Safety and Quality Manual, Internal Audit, Food Defence, Environmental Monitoring and Management of Allergens among others.
